Calypso bean is a black and white bi-colored heirloom with a distinctive pattern of color and the reason it is also known as ying yang- the symbol of balance, or Orca- colored like the seafaring whale. The pattern is retained when cooked, and the plump beans have a nutty, slightly sweet flavor, and creamy texture. Incredibly productive plants are well adapted to most climates. Bush type.

Harvest:Leave beans on the plant until most ofthe leaves have turned brown and pods are dried and withered. If fall weather is wet or frost threatens the harvest, pull up the plants, and finish drying indoors.

Tips: Grow in light, well-drained soil, and provide adequate, even moisture, especially at flowering time. Dry soil can result in low yields and fibrous pods.
