Arugula is a somewhat pungent salad green. Young leaves are sort of nutty and mustardy. Older leaves can become unpleasantly bitter, but the flowers are edible and attract pollinators. It is wise to protect Arugula from flea beetles with a row cover. This is the best variety for our March-April planting and May-June harvests. Wild Arugulais better for the rest of the summer.
